Basic Baked Oatmeal


This recipe can be cut in half for two servings and baked in a 5x9 inch bread pan, or doubled for a crowd and baked in a 9x13 inch pan. The bake time is the same.

Basic Baked Oatmeal

1 cup whole milk, coconut milk, sugar-free nut or rice milk, water, or 1 1/4 cup yogurt*
1/3 cup melted coconut oil or melted butter
2 eggs
1/4 to 1/3 cup whole cane sugar (sucanat), real maple syrup, honey, or regular sugar
1/2 teaspoon vanilla, optional
2 cups old fashioned or quick cooking oats
1/2 teaspoon salt
1 teaspoon baking powder*

Preheat the oven to 350 degrees.

In a medium mixing bowl combine the first five ingrediants. Stir in the remaining ingredients. Using coconut oil or butter, lightly grease a 8x8, 9x9, or 9-inch round pan. Poor the batter into the pan.

Bake for about 30 minutes or until the edges start to brown. Serve with milk or milk substitute, plain yogurt with a drizzle of real maple syrup or honey, chopped fresh fruit, dried fruit or nuts.

Note: When served with a lot of toppings this recipe is more filling and will serve up to 6 people. 

* If using yogurt, omit baking powder and use 1/2 teaspoons baking soda instead.

Preparation time: 7 minutes. Bake time: 30 minutes. Servings: 4-6.
